Sunny Side Up Pizza

A breakfast pizza featuring a sunny-side-up egg in the center. The runny yolk adds richness to the pizza, paired with crispy bacon and cheese.

Ingredients

  1. 1 (10 ounce) package pre-baked
  2. thin italian bread shell crust
  3. 6 eggs
  4. 1 1/2 cups shredded mozzarella
  5. cheese
  6. 8 bacon strips, cooked and
  7. crumbled
  8. 1/2 cup chopped sweet red
  9. pepper
  10. 1/2 cup chopped green pepper
  11. 1 small onion, chopped

Directions

  1. Place crust on a greased pizza pan. Using a 2-1/2-in. biscuit cutter,
  2. cut out six circles from crust, evenly spaced and about 1 in. from
  3. edge. (Remove circles and save for another use.)
  4. Bread an egg into each hole. Sprinkle with cheese, bacon, peppers
  5. and onion. Bake at 450 degrees F for 8-10 minutes or until the eggs
  6. are completely set.
