Slow Cooker Chicken Afritada

Chicken afritada is typically cooked on the stovetop. This yummy comfort dish is straight from the Philippines, but this recipe is cooked in the slow cooker for ease! Serve it over rice.

Ingredients

  1. 1 pound skinless, boneless chicken breasts, cut into cubes
  2. ½ cup soy sauce, or to taste
  3. ½ cup olive oil, or to taste
  4. 1 lemon, juiced
  5. 3 cloves garlic, minced
  6. ground black pepper to taste
  7. 3 red potatoes, cubed
  8. 2 tomatoes, cubed
  9. 2 carrots, chopped
  10. 1 onion, sliced (optional)
  11. 1 green bell pepper, sliced
  12. 1 red bell pepper, sliced
  13. 1 yellow bell pepper, sliced
  14. 1 cup green peas

Directions

  1. Combine chicken, soy sauce, olive oil, lemon juice, garlic, and black pepper in a slow cooker; marinate for 10 to 15 minutes.
  2. Stir potatoes, tomatoes, carrots, onion, bell peppers, and peas into chicken mixture.
  3. Cover slow cooker. Cook on Low for 7 to 8 hours or on High for 3 to 4 hours.
