Kielbasa Skillet Stew

A smoky, sausage-heavy stew with kielbasa, potatoes, and peppers. Cooks quickly in a skillet and delivers bold, Eastern European-style flavor.

Ingredients

  1. 5 bacon strips
  2. 1 medium onion, chopped 1 pound smoked kielbasa sausage, thinly sliced
  3. 2 (15.5 ounce) cans great northern beans, undrained
  4. 2 (8 ounce) cans tomato sauce
  5. 1 (4 ounce) can chopped green chilies
  6. 2 medium carrots, thinly sliced 1/2 medium green pepper, chopped
  7. 1/2 teaspoon italian seasoning 1/2 teaspoon dried thyme
  8. 1/8 teaspoon pepper

Directions

  1. In a 12-in. skillet, cook bacon until crisp; remove to paper towel to
  2. drain. In drippings, cook onion and sausage until the onion is tender; drain. Stir in remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 45 minutes or until vegetables are tender, stirring occasionally. Crumble bacon and sprinkle on top.
