This is a yummy recipe for moist, grilled fish fillets made with only one tablespoon of oil, and served with a fresh-tasting pesto sauce.
Ingredients
2 (7 ounce) white fish fillets
1 tablespoon olive oil
salt and ground black pepper to taste
1 bunch fresh basil
1 cup extra-virgin olive oil
2 garlic cloves
1 tablespoon pine nuts
1 tablespoon grated parmesan cheese
Directions
Preheat an air fryer to 355 degrees F (180 degrees C) according to manufacturer's instructions.
Brush fillets with 1 tablespoon olive oil; season with salt and black pepper. Place in the air fryer basket. Set timer for 8 minutes.
Pick basil leaves; place into the bowl of a food processor or mortar. Add 1 cup extra-virgin olive oil, garlic, pine nuts, and Parmesan cheese; pulse or grind until turns into a sauce. Season with salt.
Place fillets on a serving plate; drizzle with pesto sauce.
