Festive Beef Tenderloin

An elegant beef tenderloin roast seasoned and cooked to perfection. Great centerpiece for holiday dinners or special occasions.

Ingredients

  1. 4 (1/2 inch thick) beef tenderloin steaks
  2. 1/4 cup crushed saltine crackers 1/4 cup mayonnaise
  3. 2 tablespoons minced fresh parsley
  4. 2 teaspoons prepared horseradish 1/4 teaspoon pepper

Directions

  1. Place steaks on a greased broiler pan. Broil 3-4 in. from the heat for 8 minutes on each side.
  2. Combine cracker crumbs, mayonnaise, parsley, horseradish and pepper. Spread over steaks. Broil 2-6 minutes longer or until meat reaches desired doneness (for medium-rare, a meat thermometer should read 145 degrees F; medium, 160 degrees F; well-done, 170 degrees F).
