This recipe calls for a small amount of salt to be added into the base in order to enhance the flavor of the ice cream. By the way, salt lowers the freezing point of water, which is why you usually pair rock salt and ice for the mixture that surrounds the main canister in ice cream churns. The salt prevents the ice from fully melting before the ice cream base cools down. So the idea of adding salt to the ice cream may seem odd, as you do want the ice cream to freeze. But in this recipe, the amount of salt is so small that you don’t have to worry about it having any effect on the freezing time for the ice cream.
