Cream cheese, dried cherries and crunchy walnuts give this overnight oats recipe a cheesecake-like flavor and creamy texture. Fresh lemon zest adds a bit of zip, and a hint of sweetness from raw cane sugar blunts the tart edge of the fruit.
Ingredients
½ cup old-fashioned rolled oats (see tip)
½ cup water
pinch of salt
2 tablespoons reduced-fat cream cheese
1 tablespoon chopped dried cherries
1 tablespoon toasted chopped walnuts
2 teaspoons raw cane sugar, such as turbinado
½ teaspoon lemon zest
Directions
Combine oats, water and salt in a jar or bowl and stir. Cover and refrigerate overnight.
In the morning, heat the oats, if desired, or eat cold. Top with cream cheese, cherries, walnuts, sugar and lemon zest.
