Barbecued Beef

Shredded or sliced beef simmered in tangy barbecue sauce. Delicious in sandwiches or served over rice, it's a picnic or potluck classic.

Ingredients

  1. 1 1/2 cups ketchup
  2. 1/4 cup packed brown sugar 1/4 cup red wine vinegar
  3. 2 tablespoons prepared dijon- style mustard
  4. 2 tablespoons worcestershire sauce
  5. 1 teaspoon liquid smoke flavoring 1/2 teaspoon salt
  6. 1/4 teaspoon ground black pepper
  7. 1/4 teaspoon garlic powder
  8. 1 (4 pound) boneless chuck roast

Directions

  1. In a large bowl, combine ketchup, brown sugar, red wine vinegar, Dijon-style mustard, Worcestershire sauce, and liquid smoke. Stir in salt, pepper, and garlic powder.
  2. Place chuck roast in a slow cooker. Pour ketchup mixture over chuck roast. Cover, and cook on Low for 8 to 10 hours.
  3. Remove chuck roast from slow cooker, shred with a fork, and return to the slow cooker. Stir meat to evenly coat with sauce. Continue cooking approximately 1 hour.
